The predominant constituent of natural honey is carbohydrate. In fact, 79.5% of it is carbohydrate. Carbohydrates are mainly fructose (39%) and glucose (32%). Maltose, sucrose and other polysaccharides are also present in smaller quantities. On average, water accounts for 17% of honey's total composition. This is why honey is both liquid and thick.
